The Nubian goat, or the floppy eared loves on the farm are Kate’s original favorites. Her very first goat was a Nubian and when Brendan and Kate started Hoofprint Cheese Company, they knew they wanted a herd including Nubians. The Nubian goat is known for their long, pendulous ears and their roman noses. They also are high butterfat producers, which is essential for cheese making and rich, sweet milk.
